Very ripe bananas, brown butter, the technique that keeps it moist for five days. My favourite weeknight bake.

A taster (free, always)

My five-minute eggless cookie.

Not a real cookie. A "I need something sweet right now" cookie. One bowl, one fork, microwave only.

Ingredients (makes 1)

  • 1 tbsp melted butter
  • 1 tbsp brown sugar
  • 1 tsp milk
  • ¼ tsp vanilla
  • 3 tbsp flour
  • 1 tbsp dark chocolate chunks
  • A pinch of salt

Method

  1. Mix the wet (butter + sugar + milk + vanilla) in a small mug until smooth.
  2. Stir in the dry (flour + salt). Don't over-mix; you'll get a thick cookie dough.
  3. Press in the chocolate chunks. Microwave 40 seconds.
  4. Eat with a fork while the chocolate is still molten. Two if you're being honest.

The real recipes in the vault use cultured butter, a 24-hour cold rest, and a 12-minute oven bake. This is the fun cousin.
