Letter № 14 · Sunday morning
On brown butter, slowness, and the smell of someone's grandmother's kitchen.
Dear friends, I tried a new biscoff recipe this week. I burned the first batch. The kind of burnt where you smell it from the next room and you know.
I find I'm in less of a hurry now. Browning butter takes 8 minutes; you can't shortcut it. You stand over the pan and the smell turns from butter, to milk, to something else. That last bit is where the magic lives. Skip it and you've made cookies. Wait for it and you've made the cookie someone remembers ten years later.
